Ingredients


  • 1​ ​cup​ ​broccoli,​ ​cut​ ​into​ ​pieces

  • 3⁄4​ ​cup​ ​sundried​ ​tomatoes,​ ​cut​ ​into​ ​smaller​ ​pieces

  • 1​ ​cup​ ​cooked​ ​pearl​ ​couscous

  • 1​ ​can​ ​or​ ​1​ ​cup​ ​self-prepared​ ​lentils,​ ​drained​ ​and​ ​rinsed​ ​well

  • 1​ ​cup​ ​baby​ ​spinach,​ ​washed

  • 1⁄2​ ​onion,​ ​diced​ ​finely

  • 2​ ​garlic​ ​cloves,​ ​crushed

  • 2​ ​Tbsp​ ​olive​ ​oil

  • Salt​ ​and​ ​pepper​ ​to​ ​taste

Directions

  • Cook pearl couscous as per instructions
  • Lightly steam broccoli, leaving a little firm
  • Heat a small amount of the olive oil in a pan and sauté onion for 2 minutes, add garlic and continue to cook for another minute or so. Stir in lentils for a further minute to warm through.
  • In a large bowl, make a bed of baby spinach. When the couscous is ready, make a layer over the spinach to allow the heat to wilt it. Add broccoli over the top.
  • Add onion, garlic and lentil combination as well as the broccoli and the sundried tomatoes, add salt and pepper and the rest of the olive oil.
  • Mix throughly, serve and enjoy.
